Yeast Donut Production Equipment

STOK Engineering offers equipment for end-to-end yeast donut production: yeast donut cutters, proofing chambers, fryers, oil filters, and glazers. Equipment can be ordered separately or as an integrated made-to-order production line. ① Yeast Donut Cutting

Donut cutting is the first stage of yeast donut production. STOK Engineering manufactures and distributes specialized equipment for cutting thick yeast dough.

② Proofing

After cutting, donuts are placed on trays layered with a special proofing cloth. The trays are then placed in the proofer, which enables yeast donuts to rise under precisely controlled temperature and humidity.

③ Loading

Once the donuts are fully proofed, the trays are removed from the proofer and loaded on the feeder. The proofing cloth is attached to the feeder via which the donuts get pulled along and dropped in the fryer.

④ Frying

Donuts are automatically transported through the fryer and flipped in the middle for consistent frying on both sides. Desired temperature and frying time can be configured.

⑤ Glazing

The cooked donuts can be glazed after cooling down, if desired. Donut glazer with heater can be used to apply a glazing mix that requires melting, such as chocolate.

Yeast Donut Cutter (Depositor)

STOK engineering offers automatic yeast donut depositors. Donuts are cut directly on top of a tray that is layered with proofing cloth. The depositor can be ordered with the stainless steel table option or without. It can also be attached using our column mount or wall mounting kit.

Donut Proofer

Once the donuts are freshly cut, the trays are loaded on racks, which can be rolled directly into the proofer. Here the donut yeast continues to rise for 30-40 minutes to an ideal shape and texture. The proofer maintains precise temperature and humidity for consistent donut production results.

Donut Feeder

Proofed donut trays are loaded onto the feeder so it can drop them in the fryer without distorting their shape. Each donut tray is covered with a proofing cloth that is attached directly to the feeder. The feeder then pulls the proofing cloth and drops the donuts in the fryer.

Donut Fryer

After donuts drop from the feeder into the fryer, the fryer automatically transports the donuts through the frying oil by pushing them via rods. Donuts are automatically flipped in the middle for frying evenly on both sides. Desired temperature and frying time can be configured for variable productivity needs.

Donut Glazer (with heating)

The Donut Glazer enables efficient uniform glazing (icing) of cooked donuts. It can also be used for pastries such as cinnamon rolls and other baked goods.

Donut Glazer (without heating)

The Donut Glazer enables efficient uniform glazing (icing) of cooked donuts. It can also be used for pastries such as cinnamon rolls and other baked goods.

Oil Filter

The filter removes particles from the oil inside fryer and can enable up to 50% savings on oil costs. It increases the oil quality, reduces workload around the fryer, and enables a more sustainable operation.
