How to make delicious cake donuts that work with automatic donut machines?

We’ve seen our clients from all over the world tweak and experiment with recipes and come up with amazing creations. Here are a few selected ones that work amazingly well and have been liked internationally.

We have tested and tweaked these recipes to work perfectly with STOK Engineering’s automatic donut-making machines. Below you will find details on how to prepare them.

Recipe #1: The Vanilla Yogurt Donuts

  • 3 kg yogurt

  • 3 kg flour

  • 20 g baking soda

  • 10 g salt

  • 90 g sugar

  • 1 g vanilla

Mix the yogurt, salt, baking soda and sugar. Stir with a mixer on low rotations setting, until you get consistency as per the video below. Gradually keep adding the flour and keep mixing it in evenly.

Important! Correct Dough Thickness

Try to mix no longer than 3-5 minutes. The dough must be semi-liquid and tear from your mixer or paddle when you raise it, as per the video above. Avoid mixing for too long or too fast because the gluten makes the dough elastic and it will not work with automatic machines. These physical properties of the dough are important for any recipes. If the mix gets too thick, just add some more yogurt and mix again.

Recipe #2: The Classic Cake Donut

  • 2 kg flour

  • 600 g sugar

  • 200 ml oil

  • 8 eggs

  • 40 g baking powder

  • 800 g water or milk

Mix and stir all ingredients together for 2 minutes, wait 1 minute, stir again for 1 minute and should be ready to use.

Like the vanilla yogurt donut recipe, the same consistency of the dough must be achieved. If the mixture gets too thick, add a bit of water (about 50 ml) and mix again.

Recipe #3: Not exactly a recipe…

The third and probably most efficient way to create donuts commercially is to simply purchase and use a complete donut mix from a reliable local source. The mix typically comes in the form of dry powder and is very easy to prepare by simply mixing it with a fixed quantity of water. This takes out a lot of the guesswork and enables much higher degree of consistency. That’s especially helpful when you manage a franchise or multiple retail locations.

To use ready-made donut mix, follow the preparation instructions as provided by the supplier. Just make sure to tweak how much water or milk you add to it so that the dough is at the right thickness, as per the video we provided. If it goes too thick, the machine won’t be able to cut the donuts. If it goes too liquid, the donuts will not shape up properly.
